    Components
  • 4 corn ears
  • 1 tablespoon vegetable oil
  • 1 teaspoon salt
  • 1/2 cup Parmesan cheese
  • 1/2 cup Cotija cheese
  • 1/2 teaspoon pepper
  • 2 tablespoons mayo
  • Sprinkle of cayenne
  • Cilantro and lime for garnish

    Steps
  • Divide each ear of corn in half.
  • Cover the corn halves with olive oil and sprinkle salt on them.
  • Crumble the cheeses in a food processor until they reach a crumbly texture. Combine the cheese with the pepper on a plate and keep it aside.
  • On a skillet or grill, grill the corn on high heat for 10-12 minutes, flipping every 2-3 minutes.
  • Remove the corn from the heat and lightly brush each piece with mayo.
  • Coat the corn pieces in the cheese mixture, and for some extra heat, sprinkle them with cayenne.
