Corn is often not regarded as one of the healthiest vegetables, but that’s an unjust stereotype. Corn is rich in crucial vitamins and fiber, not to mention it’s delicious. However, want to enhance its flavor? How about adding some cheese and zest.
Mexican Street Corn
Ingredients
4 corn cobs
1 tablespoon vegetable oil
1 teaspoon salt
1/2 cup Parmesan cheese
1/2 cup Cotija cheese
1/2 teaspoon pepper
2 tablespoons mayo
Sprinkle of cayenne pepper
Cilantro and lime for garnish
Instructions
Halve each corn cob.
Coat the corn halves with vegetable oil and sprinkle salt over them.
Process the cheeses in a food processor until crumbly. Combine the cheese with pepper on a plate and set it aside.
Cook the corn on high heat on a skillet or barbecue for 10-12 minutes, flipping every 2-3 minutes.
Remove the corn from the heat and lightly brush each piece with mayo.
Coat the corn pieces with the cheese mixture and for some heat, sprinkle cayenne pepper over them.
